Meal Plan 4/26/14-5/2/14

Well, the Easter ham leftovers are all gone, so it's time to once again figure out what I'm making for dinner this week. 

Saturday: Stuffed Chicken Breasts.  I was inspired by this recipe at Iowa Girl Eats.. and a recipe I saw in my Eating Well magazine using my preferred smoke Gouda cheese.  I ended up making my own stuffing mix of caramelized onions and kale, diced apples, diced smoke Gouda, and some spices.  It turned out pretty darn yummy. Now if I could only figure out how to slice a pocket in a chicken breast better.

Sunday: When I asked Hubs what he wanted to eat this week, he handed me a phone and a recipe someone had tagged in G+.  He thought it had bacon, turns out it didn't, but in looking at that recipe, I found one for Chicken and Broccoli Mac & Cheese, that calls for a quart of whipping cream, so why not try it!?  I am subbing fat free half and half for the whipping cream...

Monday: Need something quick tonight, so crock pot cooking it is.  Going to try some orange chicken in the crock pot, using chicken breast instead of drumsticks like the recipe calls for, and make some rice and stir fry veggies to go with it. 

Tuesday: Leftovers... or if there's not enough left, spaghetti.

Wednesday: The weather looks cool enough for soup, still (Yay, it's my favorite type of food to cook!) Tonight we'll have chicken and dumplings.  I tend to follow this recipe, though I use rotisserie chicken and for poultry seasoning, Old Bay. 

Thursday: leftovers

Friday: Brinner.  Believe it or not, we haven't had breakfast for dinner in awhile.  Time to rectify that!

Meal Plan 4/12/14 to 4/18/14

Driving home six hours today gave Hubs and I plenty of time to figure out our plan of attack for meals this week.  And given that most of it was in the rain and temps over the weekend fell from near 80 to below 30, it made it easy to decide on soup for Sunday.  The rest were all things Hubs mentioned, and, bonus, are things that will help clean out the freezer. 

Saturday: our parents are cooking

Sunday: Chicken and Wild Rice soup

Monday: pork chops with mashed potatoes and gravy, per request of Hubs.

Tuesday: leftover soup and pork chops

Wednesday: Creamy Sausage and Tomato Pasta (it's a bit spicy, and an interesting combo of ingredients that we find yummy, or at least we adults do.

Thursday: Leftover pasta, or brinner

Friday: Something on the grill

Meal Plan for 3/29/14 - 4/4/14

Every minute these days is spent getting our house ready to be put on the market, so most of our meals, if I have time to make something, are really quick.  I found last week, though, when I didn't plan, we ate out a lot or had lots of frozen dinners, and not the kind I made ahead and froze, so I'm glad I found time to plan for this week.

Here's what's on tap:

Saturday:  Steaks on the grill.  Weather in the 60s. Yes, please.

Sunday: Spaghetti.  I have homemade sauce in the freezer we're trying to finish up.

Monday: Tacos.  Going to look at a house tonight, so super quick dinner needed.

Tuesday: The only night of the week we don't have plans.  Garlic Cheddar Chicken

Wednesday: Hawaiian Pulled Pork Sandwiches.  Kristen made these into nachos, but we're just having sandwiches.  I love pineapple, but Hubs doesn't, so I'm going to sneak it into the crock pot in the hopes that when it mixes with the BBQ sauce, it just sweetens it up.  I'm using crushed pineapple so that when I shred it, it's hopefully unnoticeable. 

Thursday: Leftovers

Friday: Brinner (surprise!) It's my go-to Friday night supper. It's easy to do after a long week, and if I end up not making something earlier in the week, can easily make it on this night.

Meal Plan 3/8-3/14

Life is going faster than I can keep up with it right now.  So many things happening on the work, family, and personal fronts.  And posting here has taken a bit of a back seat, though I have still planned.

Here's what's on tap for this week:

Saturday: We had crock pot Italian Beef sandwiches.  Don't let the weird ingredients on the list fool you. They give the meat such wonderful flavor. Not spicy or too Italian dressing-tasting. It is really yummy!

Sunday: With temps in the 70s today, we're grilling hamburgers on the grill.  I always add a package of dry onion soup mix for each pound of hamburger, and throw in a few shakes or Worcestershire sauce and liquid smoke.

Monday: Teriyaki Chicken Stir Fry. I have to double this for our family of four, and substitute frozen stir-fry veggies for the broccoli, and instant brown rice instead of white. Easy weeknight dinner, and I feel good because we're getting our veggies.

Tuesday: Surf and Turf.  The kitchen is going to me in disrepair most of the week, so today we're having steaks on the grill and shrimp.

Wednesday:  Sweet potato chicken sausage grill packs.  This is my own little creation inspired by a stuffed sweet potato recipe I saw.  I dice up some peeled sweet potatoes and granny smith apples, slice up some apple chicken sausages, and throw in some drained and rinsed black beans.  Top it off with some grated smoked gouda or guyere and throw it on the grill.  Delicious and fairly nutritious. 

Thursday:  hoping leftovers... or fast food if there is none. 

Friday: Wine Braised Beef Shepard's Pie... if my kitchen is back in order.  I saw this recipe today before I headed out grocery shopping, and it just so happened that chuck roast was on sale.  I've never been a big fan of Shepard's pie- though I don't think I've actually ever eaten it. I just never understood the point of putting the potatoes on top. Can't I just make the meat and have potatoes on the side? But then I thought of making them in little single-serving bowls, and that sounded cute, so I'm going to try it :)   Plus, I have a co-worker with a baby in the NICU, and I'm trying to make recipes with leftovers to stock their fridge/freezer for awhile.  This one fits the bill for that, too.

Meal Plan 2/22/14 - 2/29/14

I missed last week, and by Friday, was really missing my plan.  Last weekend was the kids' birthday parties, and after that, I was exhausted and we just spent the week surviving until this weekend.  Luckily some of the meals I had planned the week before we didn't make that week, so I knew what to make for part of the week.  By the time Thursday and Friday rolled around, though, I was out ideas, so I was actually looking forward to meal planning for this week. 

Here's what's on tap for the week:

Saturday: The sun is shining today and with highs close to 40, we're going to grill out tonight.  Most likely some specialty brats from our favorite grocery store. 

Sunday: Bacon wrapped pork tenderloin.  My mother-in-law made this for Christmas and I couldn't get enough of it, so she willingly shared the recipe with me.  I'll try to snap some pictures as I'm making it and share the recipe on here.

Monday: leftover pork tenderloin

Tuesday: Ham and Cheese Gnocchi. Gnocchi is one of my favorite foods, and paired with creamy ham and cheese goodness, I couldn't pass this up when a friend pinned it. 

Wednesday:  Chicken Minestrone Stew.  It's been awhile since I made this one, but I remember us all liking it, so I'm hoping that holds true again.  Wednesday is a busy night, so I needed a crock pot meal for this one. 

Thursday: leftover stew

Friday: Roasted Chicken. I'm trying to clear some things out of the freezer and I've got a whole chicken in there that needs to be used.  Using a combination of a few recipes and doing this in the crock pot.

Meal Plan 2/8/14- 2/14/14

On the first day of this plan, we had a birthday party. On the last day, we'll celebrate love.

Here's what's on tap for this week:

Saturday: pizza for a TMNT birthday party.

Sunday: thanks to meat on sale, we're grilling steak in the sub-zero temps and some honey garlic shrimp, too. I'll think of it as our Valentine's meal a few days early.

Monday: Slow Cooker BBQ Spare Ribs

Tuesday: Creamy Sausage and Tomato Pasta

Wednesday: Mango Chicken with Coconut Rice

Thursday: leftovers

Friday: Red Velvet Pancakes to celebrate Valentine's Day.

Meal Plan 2/1/14 - 2/7/14

The beginning of this week was easy to plan. We ended up eating out Thursday and Friday nights. Plus, the turkey rice casserole from last week and the potato soup made so much they fed us for two nights (plus lunch for me the next day). All that left the loaded potato skillet and tacos for this week.

Monday:  tacos

Tuesday: Pot Pie Stew.  My favorite winter comfort food. In a soup form. Cooked all day in the crock pot. A must try for me. I'll make some homemade baking powder biscuits to eat with it. 

Wednesday: leftovers

Thursday: Pork chops with diced apples and sweet potatoes simmered in the crock pot with apple preserves and some cinnamon.  It was inspired by this dish, but we were not a fan of apricots, and I have some chops in the freezer, so will be using those instead of a loin.

Friday: My standby Friday supper- brinner.
