Mango Chicken with Coconut Rice


I'm serious. We had this for supper last night and had leftovers tonight... and then I promptly went to the grocery store to by more ingredients to have some in the freezer ready to go.  Ian said it was the best meal ever.  Darrin ate it and he HATES anything tropical flavored (it's the reason I removed the toasted coconut from the original recipe, didn't want to make it too coconut-y).  Annaliese ate all her rice, which is par for the course when it comes to her and supper lately. I couldn't get enough of it. It is like eating summer in the middle of winter. It's perfect. MAKE IT!

Mango Chicken and Coconut Rice

adapted slightly from Just Another Day in Paradise


1 pound chicken breast
2 tsp cumin
salt and pepper to taste
1 1/2 cups frozen corn
1 can black beans, drained and rinsed
3 1/2 cups mango salsa (I used two jars of the Newman's Own variety)

1 Tbsp butter
1 Tbsp brown sugar
1/2 tsp salt
2 cups jasmine rice
1 can coconut milk
1 1/2 cups water


To freeze: combine chicken with cumin, salt, pepper, corn, beans, and salsa in a freezer-safe container.

To prepare: cook on low 6-8 hours (I put mine straight from freezer into my crock).  Once chicken is cooked, shred.

For rice: Melt butter in a deep skillet. Add the brown sugar and salt. Turn heat on high and stir until dissolved.  Add in rice and stir frequently for one minute. Stir in the coconut milk and water. Bring to a low boil, then cover and turn to low.  Simmer for 20 minutes (at 15 minutes, mine was a bit dry, so I added in 1/2 cup water).   Remove from heat and let sit for 5 minutes. Fluff with a fork.

The rice could probably be made ahead of time and frozen as well. I haven't tried that yet, but will update if/when I do. 


Absolutely nothing. PERFECTION!

Ease of prep: 1- you just dump everything in the bag. No chopping, cooking, prepping.

Yumminess: 1- This was perfection.

Amount: 1- it fed all four of us for two dinners, and we had enough leftover for two lunches as well.
