Meal Plan for 1/18/14 to 1/24/14

This week we actually don't have anything planned for after work and it starts with a three-day weekend, a much-needed one after the craziness of last week.  The high temperature Sunday is supposed to be close to the Midwest. Amazing! We're taking advantage of that by grilling, though we're following it up the next day by having chili.

Here's what's on tap for this week:

Saturday: Pizza Gnocchi Supreme.  This was on the menu for last week, but we didn't make it, so it made planning one meal for this week nice and easy.

Sunday: Cola-Marinated Grilled Flank Steak.  This one is a new recipe for us. It's a perfect Sunday recipe- little prep, and hubs will do the cooking, so I have more time to scrapbook.

Monday: Chipotle Turkey Chili with Apples. I was surprised to see some cider from a local orchard still available at the grocery store last week when I was shopping, so this was a no-brainer to add to this week's menu.  I add in two cans of black beans (rinsed and drained) and double the recipe. This one would be an easy one to freeze before it cooks, or after. We often freeze soup leftovers in lunch-size portions to have something quick to grab for lunch. 

Tuesday: Taco Cornbread  Bake. One of our favorite things to eat.  I add a can of drained MexiCorn into the cornbread mixture.  Usually make one to bake and another to put in the freezer. 

Wednesday: One Pot Spaghetti.  My mother-in-law sent me this recipe and thought we'd like it. I love trying new recipes (see Sunday), so this was an easy one to add, too.

Thursday: leftovers. Pull everything out of the fridge from the week and the fam can choose what to eat.

Friday: brinner (breakfast for dinner).  By the time Friday rolls around, I'm usually exhausted and sick of cooking, which is why we went out for dinner last night.  Breakfast for supper is usually quick and easy to whip up, so no stress.
